There aren’t many smells I enjoy more throughout the house than a chicken roasting. We don’t have a roast dinner every Sunday, but it’s definitely something that really makes a Sunday afternoon.
Throughout the years I have tried many and varied methods for roasting a chicken, some overly complicated and with little reward. For the last five years I have followed my own way of roasting a chicken and it works every time.
Simple Roast Chicken

Cutting out all the complexity and roasting chicken the simple way. But still very delicious.

Ingredients
- 1 small chicken (approx 1.35 kg)
- 1 lemon
- 1 large onion
- Rock Salt
- Ground Pepper
- Olive Oil
Instructions
- Preheat oven to 200c/gas mark 6.
- Place the chicken in a roasting dish.
- Cut the lemon into quarters, place two in the chicken cavity and the other two around the edges.
- Cut the onion into quarters, place one in the cavity and the other three around the dish.
- Pour 2 tbsp olive oil over the chicken.
- Crunch a pinch of rock salt over the skin.
- Same with the pepper.
- Cook in the oven for 1hr 20 minutes.
Notes
- Remove the chicken from the fridge two hours before cooking or it won't be cooked in the time.
- Never follow the packet cooking instructions.
