Simple Roast Chicken

There aren’t many smells I enjoy more throughout the house than a chicken roasting. We don’t have a roast dinner every Sunday, but it’s definitely something that really makes a Sunday afternoon.

Throughout the years I have tried many and varied methods for roasting a chicken, some overly complicated and with little reward. For the last five years I have followed my own way of roasting a chicken and it works every time.

Simple Roast Chicken
Serves 4
Cutting out all the complexity and roasting chicken the simple way. But still very delicious.

Ingredients
  1. 1 small chicken (approx 1.35 kg)
  2. 1 lemon
  3. 1 large onion
  4. Rock Salt
  5. Ground Pepper
  6. Olive Oil
Instructions
  1. Preheat oven to 200c/gas mark 6.
  2. Place the chicken in a roasting dish.
  3. Cut the lemon into quarters, place two in the chicken cavity and the other two around the edges.
  4. Cut the onion into quarters, place one in the cavity and the other three around the dish.
  5. Pour 2 tbsp olive oil over the chicken.
  6. Crunch a pinch of rock salt over the skin.
  7. Same with the pepper.
  8. Cook in the oven for 1hr 20 minutes.
Notes
  1. Remove the chicken from the fridge two hours before cooking or it won't be cooked in the time.
  2. Never follow the packet cooking instructions.
